Progress

So my original plan was to finish my Paint Chip wall art yesterday, and as usual that didnt happen with a ton of homework that was dumped upon myself.  But I am mostly finished!  I have taken pictures along the way but for some reason I am having trouble putting them on my computer, I will try to fix that asap because I want you all to see how cool it looks! Spencer helped me pick out all of the colors and they are looking fantastic.

Superbowl weekend turned out to be a success, good food, good friends, good parties, and of course good game!  Go Pack!  So I tried out a new dessert this weekend and it was probably one of the most amazing things I have ever had so I knew I had to share it.  They are mini cheesecakes, sounds amazing (I know).  Trust me too, they were!  I took this original recipe off of AllRecipes.com and tweaked it a little to my liking.
 I followed most of the instructions from the original recipe except instead of making the extra mini size I did use the normal sized cupcake pan.  I placed a full oreo cookie (any other round cookie you like would work too) on the bottom instead of crushing cookies or graham crackers.  This made for a sturdier bottom to the cheesecake that didnt crumble.  I also added juice from half of a lemon into the cheesecake mixture.  You can top the mini cheesecakes with your favorite pie filling, not just cherry.  I decided to use raspberry.  With this recipe you will get about 20 mini cheesecakes.  Needless to say they were AMAZINGLY good and I can't wait to have an excuse to make them again!  So check it out at this link: All Recipes Mini Cheesecakes
